Birthday Rainbow Cake

It’s not a birthday party without my rainbow cake : )

I think that the best thing about this cake is that the frosting is made with greek yogurt (prepare the frosting the day before so it gets nice and thick)

Also remember to use gel food coloring … they are much easier to mix without compromising the cake moist level.

One more thing: try to use organic ingredients if you can… the cake will taste much better.

Here is the recipe.

YOGURT FROSTING: 

Greek yogurt: 1250 gr.

Powder sugar: 170 gr.

Vanilla extract: one teaspoon

Gelatin sheets: 40 gr

Heavy whipping cream: 500 ml 

Soak the gelatin in room temperature water for 10 minutes

Start whipping 400 ml. of whipping cream with the vanilla and the sugar.

Warm up the remaining 100 ml. of whipping cream (not to boil) and add the gelatin … mix them together.

Mix the whipped whipping cream with the gelatin whipping cream and add the yogurt … mix them together.

Cover with a plastic film and keep it refrigerated over night (at least 8 hours)

COLORED BASES:

Eggs: 10

Heavy whipping cream: 250 ml

Honey: 30 gr

sugar: 400 gr

Vanilla: 1 teaspoon

Yeast for baking: 12 gr. ( i use the brand Paneangeli )

Colors (gel): enough

Take two big bowls, crack the eggs and separate the yolk from the whites.

Mix the yolks with the honey, the vanilla and 200 gr. of sugar  (keep the other half for later)

Keep mixing with the electric whipper and when it’s nice, smooth, clear and foamy add the liquid heavy whipping cream and mix gently with the manual whip. Keep it in the fridge.

Take the eggs whites and mix them with the remaining 200 gr. of sugar… whip them like snow, very thick.

Mix the egg yolks with the egg whites very gently.

Sift the flour and the east into the mix and keep mixing with a wooden spoon.

Divide the mix in six different containers and add the food coloring.

If you use 18 cm baking pans you have to cook them at 356 F (180 C) for about 10 minutes… make sure that they are well cooked.

Let cool down all the colored bases at room temperature and put them in the fridge to get cold.

At this point you can garnish your layers with the greek yogurt frosting (just like the picture).

My kids love sprinkles so i like to cover the cake with rainbow sprinkles …
